To prepare a gluten-free Darwin Sweet Potato Laksa that serves four, gather the following ingredients:
- Sweet potato noodles: 7.05 ounces = 200 grams
- Sweet potato tubers: 17.64 ounces (approximately 1.1 pounds) = 500 grams
- Sweet potato leaves: A handful
- Garlic: 2 cloves
- Onion: 1 onion
- Laksa curry paste: 1 ounce = 2 tablespoons
- Coconut cream: 13.53 fluid ounces = 400 ml
- Vegetable broth: 16.91 fluid ounces (approximately 2.1 cups) = 500 ml
- Tamari sauce: 1 ounce = 2 tablespoons
- Salt and pepper: To taste
- Lime wedges: For garnish
- Thai basil: For garnish
- Birds eye chili: Optional
Directions
- Start by finely chopping the onion and garlic. In a large pot, heat a tablespoon of oil over medium heat and sauté the onion and garlic until softened and fragrant.
- Add two tablespoons of laksa curry paste to the pot, stirring it through the onions and garlic for 1-2 minutes to release the flavors.
- Pour in 400ml of coconut cream and 500ml of vegetable broth, stirring well to combine all ingredients.
- Peel and cube the sweet potatoes into bite-sized pieces. Add the sweet potato tubers to the pot and let them cook for approximately 10 minutes or until they are tender.
- In the meantime, prepare the sweet potato noodles according to package instructions. Usually, they need to be soaked in hot water for a few minutes until soft.
- Add the sweet potato leaves to the pot along with 2 tablespoons of tamari sauce, salt, and pepper to taste, allowing the mixture to simmer for an additional 5 minutes.
- Before serving, gently fold in the cooked sweet potato noodles to warm through.
